Diana, from A Little Bit of Spain in Iowa, shared this Oatmeal Jam Bar and it is just super yummy. I want to try and soak the grains to reduce the amount of phytic acid but haven't gotten there yet. It makes a great afternoon snack or if you use an all fruit, no sugar spread it would make a great breakfast paired with some pastured eggs.
I needed to make a apple pie the other day and was short on time so I used the dough recipe from Diana's Oatmeal Jam Bars and used apple pie filling instead of the jam. Yum Oh!
Go visit A Little Bit if Spain in Iowa for the crust recipe, this is a recipe from Nourishing Traditions (pg. 542 - Baked Apples) I used for the apple pie filling.
6 large baking apples
6 tbsp butter
1/4 cup rapadura
1 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground cardamon
Mix together and use in place of the jam. I baked it at 350 degrees for 40 minutes.
