~ Nutrient Rich Coconut Rice ~

This is my favorite way to make rice. Nutrient rich and absolutely yummy! We just found this new type of heirloom rice from Lotus Foods.

1 cup forbidden rice
1 cup bone broth
3/4 cup coconut milk
2 tbsp pastured butter
2 tbsp coconut oil
1 tbsp gelatin
1/2 tsp salt

Bring your broth and coconut milk to a boil. Add butter, coconut oil, and salt. Stir until melted. Wisk in gelatin, dump in rice and cook covered until all the liquid is absorb.
