~ Simple Creamy White Beans ~

One of the easiest way for me to save money on our food bill is to incorporate beans. We basically eat a GAPS diet and white beans are the only beans on the okay list. Until I came up with these beans (which was totally by accident) the kids were not a fan of beans. When I can get 5 lbs of organic white beans for $9 and when a 1/3 cup of beans expands to 1 cup cooked, they are a weekly menu item.

There is a bit of prep work involved with these but I promise its worth it. You will have a nutrient rich side dish that doesn't upset the belly like beans normally can. The key to this recipe is sprouting your beans and cooking them in bone broth.

I soak two cups of white beans in warm water until they are nice and plump. Then I drain them in the colander, put them in the oven with the light on overnight. Putting them in the oven helps to keep them warm, encouraging them to sprout faster.

Once they are sprouted, I put them in a stockpot and cover them with bone broth. If you have never heard of bone broth I encourage you to read more. It packs an amazing nutritional punch and gives you more bang for your buck when it comes to a food budget. I replace water with bone broth in everything I make.

I let them simmer away, covered, until nice and tender. Once they are cooked through I take the lid off and simmer away some of the liquid so that the beans get a nice creamy texture. At the very end I add butter, salt, and pepper to taste. You can add whatever spices your family loves.  Do not add salt while cooking your beans, they will remain hard.

We eat just as they are, mixed with spinach, and last night I added them to the minestrone hotdish I made. Delish!

  1. I never thought about sprouting the beans, but I guess that would be healthier like sprouting your grains for bread. Great idea!

  2. That is the one bad part about beans...I'd eat them daily if they didn't upset my belly. I will have to try sprouting them first! I am always on the lookout for cheap meal ideas and I have been trying hard to use dry beans as a replacement for canned. Thanks so for sharing!
