~ Sweet and Sour Cabbage ~

My daughter started some cabbage seeds way back in February and with the colder than normal spring we had, I couldn't get them in the ground soon enough. Only one lonely little seedling survived but it produced a huge head of cabbage.

Sweet and Sour Cabbage

1 head of cabbage, shredded [mine was a very large head]
4 -6 slices of pasture raised, nitrate free bacon
one onion, sliced
1 cup of carrots, shredded
apple cider vinegar
sprinkle of organic sugar or honey
salt and pepper to taste
tamari or coconut aminos (optional) [I didn't have any]

Saute the bacon until almost crisp, add the onion and carrot cooking until soft. Add the cabbage, cover and let cabbage wilt. I added 2-3 tbsp of apple cider vinegar (how much you add will really depend on the size of your cabbage) and about 2 tsp of sugar. That's it, super easy and delicious!
