~ Beets with a Cranberry Orange Vinaigrette ~

My kids gobble up beets when I make them like this. You can use any kind of beet, I love golden beets but some of my kids like the traditional red beet. The first time I made this I didn't have enough to go around so now I make a double batch for the six of us.

2 1/2 lbs of beets
1 tbsp of balsamic vinegar
3 tbsp of coconut or olive oil
2 tbsp of fresh basil or 1 tsp of dry basil
1/2 cup of cranberries or 2 tbsp of cranberry jelly
1 tbsp of honey
1 tbsp of orange juice
salt and pepper to taste

Cube beets and mix all together and roast in a 400 degree oven until fork tender.
